PROJECT OVERVIEW...

Created from 3 architecturally distinct adjoining buildings on Hobart’s famous waterfront Salamanca Place at Parliament Square: an Art Deco building, a Heritage building (originally a hospital built in 1847), and a gleaming new Pavilion building, The Tasman is the 1st Marriott Luxury Collection hotel in Australia and recently named as one of the World’s 50 Best Hotels in 2024 amongst many other national and international awards for design and service since its opening in December 2021.

 Dreamtime was commissioned to create the hotel’s sole restaurant’s concept, an Italian restaurant called Peppina, in a Food & Beverage consultant role in an effort to overcome Australian’s aversion to dine in hotel restaurants, and has since become something of its own tourist destination, becoming a “must visit” when in Hobart through most tourist and blog guides to the city.

With a concept blending relaxed, “un-hotel” laid-back luxury within the mostly heritage sandstone interior and creatively incorporating an external dilapidated, half-demolished free-standing red brick building in the previous outdoor courtyard into the restaurant’s space via a glazed roof that was transformed into a stunning theatre kitchen - opened-up to the restaurant with wall sections removed while maintaining the peeling painted walls as a unique feature by cladding them in glass and dramatically illuminating them, making it one of the most unique open kitchens in the country, if not Asia.

Mary Mary’s concept, fully located within the Heritage former St. Mary’s Hospital, a facility for the poorer classes, was to create a premium cocktail bar within the stunning heritage building dating from 1860’s that provided an old world, comfortable, moody ambiance inviting many hours of drinking enjoyment in a refined yet exciting ambience suitable for one of the country’s top cocktail bars in conjunction with Singapore-based operational company Proof & Company, operators of 5 of the “World’s 50 Best Bars” at the time of Mary Mary’s development.
